Quick and easy, light salad with VioLife Greek White block.
You can make the simple version, or you can add more ingredients and make it more fancy. F.ex. you can add canned corn, or different colors of bell peppers. You can even add nuts, or sunflower, or pumpkin seeds.
Ingredients:
– One VioLife Greek White block
– canned pineapple chunks or slices
– red bell pepper
– salt and pepper
– vegan mayo
Direction:
Cut the block, red bell pepper and pineapple into small cubes. Add mayo and salt, and pepper to your liking. ( I usually add 3 full spoons of mayo). Mix the ingredients. Store in the fridge. Serve for breakfast, with lunch, as a side dish, with crackers.
