This dish my mom used to make. I changed it to vegan. You can make it more spacy by adding more spascy seasonings or hot peppers.
4 red bell peppers
4 green bell peppers
4 yellow bell peppers- optional
(You can use only red pepper if you prefer,it is really up to you how many and which one you want to use).
4 cloves of garlic
1-2 cups of hot salsa (optional)
2 vegan bullion cubes
cup of frozen veggie mix (optional)
gluten free pasta of your choice
In the pot combine 4 cups of water and vegan bullion. When the bullion desolves add cut peppers, cut tomatoes (It is good idea to take of the skin). Add cut onion, mixed frozen veggies, garlic,salsa. Mix everything together. Add tomato paste (it is more for color of the dish).
Meanwhile cook gluten free pasta according to direction.
Add seasonings to Leczo.
